The Bikini Cocktail
Yields 10 people
For the Clementine Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Cocktail (produces 850ml, serving 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Method
For the Cordial: Place all the components inside a pot, bring to a simmer, mixing until the sugar dissolves. Then, turn off the burner and leave to reach room temperature fully. Decant into an sealable bottle, seal and store in the fridge, where it will keep for around four weeks.
Preparing the Premix: Combine every spirits and syrup into a big jug, leave to sit for one hour, then filter it best through cheesecloth, so it's fully clarified.
For serving: Pour 85ml from the batch mix to a mixing glass filled with ice, and stir gently for about 60 seconds to chill. Filter into a cold coupe glass or equivalent, top with some cranberries and finish with a quick spritz of the essential oil over the drink.
